Vanilla Cupcakes


– 3 cups flour
– 2 1/2 teaspoons baking powder
– 1/2 teaspoon salt
– 2/3 cups butter, softened
– 1 3/4 cups sugar
– 2 eggs
– 1 1/4 cups milk
– 1 teaspoon vanilla


– Preheat oven to 350F. Line 2 dozen cupcake tins with papers.
– Sift together the flour, baking powder and salt into a bowl.
– In a large bowl cream together the butter and sugar with an electric mixer until fluffy.
– Add eggs one at a time mixing well after each.
– Add the vanilla.
– Alternately add the flour mixture and the milk into the butter and eggs, making sure to fully incorporate.
– Pour the batter into the cupcake tins and bake for 15 to 20 minutes or until a tester comes out clean.
– Let cool completely before frosting.
